Happy St. Patrick’s Day! We’ve had a busy few days of unpacking & shopping for our new apartment but are definitely feeling the Irish spirit here in the city. In honor of my Irish roots, I thought I’d share my 3 all-time favorite green dishes today – they’re healthy, delicious, festive & food coloring-free.
Mint Pea Pesto Linguine | Go Green Veggie Curry | Spinach Goatichoke Dip
3 reasons to eat green today:
- Many green foods contain high amounts of antioxidants & phytonutrients which have cancer-fighting and protective properties
- They’re good sources of iron and zinc which are critical for enzyme function, oxygen transport and immune function – soybeans, spinach, lima beans, swiss chard, peas, kale, broccoli & brussels sprouts to name a few
- Leafy greens contain lots of water and fiber – a little hydration to offset a few green beers is never a bad thing
