Pomegranate Champagne Martini

Hi again!

Here is the recipe for the tasty pomegranate champagne martini I created last night during the hurricane party. I was inspired by the color or the actual Hurricane drink but wanted to make something a tad fancier, with way less sugar and without rum since I’m not a big fan of the stuff. A standard Hurricane cocktail has almost 340 calories. That’s just for one cocktail! Irene has 195 calories.

Irene, the Pomegranate Champagne Martini

Ingredients

Scale
  • 2 fluid ounces vodka
  • 2 fluid ounces champagne
  • 1 fluid ounce 100% pomegranate juice
  • mint leaves, chopped

Instructions

  1. Place martini glasses in the freezer for 15 minutes to chill (or fill with ice water for a few minutes). Muddle 3-4 mint leaves in the bottom of a cocktail shaker. Add ice, vodka, pomegranate juice and 1/2 of the champagne. Shake a few times but be careful – too many shakes will make the top explode! Strain into chilled martini glass, top with remaining champagne and garnish with a pinch of mint.

Irene is super tasty (almost a little too tasty) and has far fewer calories than some of those other heavy-hitting cocktails out there. Just make sure you drink 1-2 glasses of water with your martini to help prevent dehydration!
